But what do you guys think is it worth loading as many units in to a combat as you can?

Its also worth noting that if a unit is in combat with an enemy unit at the beginning of the assault phase then they can only attack that unit. So in this example the Genestealers could only ever hit the flayed ones rather than the more expensive destroyers.

I don’t think this is strictly true. The rules say at the beginning of the combat, not the beginning of the assault phase. So any Genestealer touching both Flayed Ones and Destroyers could choose which unit to attack, even though the Destroyers had only just charged in.
Thing is in this example your “soft units” are better then the flayed ones. the immortals and destroyers both have the charge putting them a 2 attacks at strength 4 weapon skill 4. all 3 necron units are lower initiative then the stealers but immortals and destroyers are toughness 5 so the stealers are better off focusing on the the flayed ones as all units involved are equal threat but the flayed ones lay down easier.
This is a great tactic but one you have to be carefull with in that if you comitt heavy support to it and the other player manages to kill them you could find your self with no weapons able to take out his armoured units. For instance my orks VS my brothers tau my bro comited a battle suit to take out a unit of boys and lost the battle suit leaving him with no weapons able to get through my defdreads armour (his hamerhead went boom on turn 1 due to some poor deployment)
I remember doing that same trick with a couple of units of tau fire warriors once and it actually worked.
Thanks for the Tip. I’m also a necron player and in need of new tactics. Always love the “no guts, no glory” mind set, because what have you got to loose.
Unless that unit is Abaddon and ten termies with lightning claws out there cutting up your unit, you should always help your bros fight.
