It’s open source … of course setup is going to be weird.

At least, that’s been kind of my experience with any of these ‘free’ things.
Somehow userfriendly deployment is never a thing they’re willing to add as a feature.

As PLEX uses the data on a file system you could run a separate website for users to upload their videos to a storage device that is linked to a PLEX instance (or any other media server).
It won’t be an all-in-one solution so it won’t look&feel like a single system, but it wouldn’t be impossible.
